HEAD PASTRY CHEF 5* RESORT SOUTHERN IRELAND. We have been retained by our exclusive client to search for a fantastic Pastry Chef for their 5* Hotel Resort This multi award winning property offers the very best in cuisine & wines to the discerning guests internationally. We are now seeking an artistic and creative Pastry Chef to be the Cherry on the Top! Primary function: The Pastry Chef must assist the Executive & Head Chef in the development of new concepts in Pastry by creating and introducing new menus, recipe's and creative ideas that will break the mould. A major responsibility is to create standardized recipes, keep food cost at minimum and at the same time, initiate amazing patisserie creations without effecting taste nor quality. Major Responsibilities: Primary duties and responsibilities include, but are not limited to, the following: " Be responsible for efficient daily functioning of the entire Pastry department and Supervises the preparation and production of all pastries for all menus in Fine Dining, Contemporary Dining and Banqueting (Limited. " Ensure all cakes and pastries are prepared to recipes and consistency is maintained in the dish out of all orders. " Ensure each pastry item that goes out of the department kitchen is of highest standard and quality. " Organize staff, allocate resources, execute controls and systemize daily functioning of Pastry operations. " Ensure top quality and hygiene (HACCP) both for products and equipment and maintain food cost at a minimum. " Should monitor closely and continuously the activities of junior pastry chefs and ensure smooth running of the entire pastry section. " Should be able to motivate and lead the team from the fore-front. " Take up any related responsibilities handed over to you; by the management. " Assist Kitchen management in the development of new concepts. " Provides training and guidance to pastry commis and other employees performing related work. " Attends to day-to-day problems and needs concerning equipment and food supplies; detects and ensures disposition of spoiled or unattractive food, defective supplies/equipment, and/or other unusual conditions. " May be required to prepare baked goods for special diets. Prerequisites: " 5* Hotel or Resort experience in Ireland or Internationally is preferred. " 3-5 Years' experience as a Pastry Chef/Head Pastry Chef actually running a section in a Large 5* or a noted 4* property. " Has a mix of Pastry, Chocolate, Sugar, Gateaux, Ice Creams, Sorbets, Petit Fours and all types of pastry experience. " Experience in an fresh scratch kitchen- no packet items here. " Has an artistic flair for articulate pastry presentation to photo standard. " Has exposure at minimum of 1/2 rosette standard. " Experience in Fine Dining, Bib Gourmand, Michelin- (Europe) Chef Hat ( Australia), Diamond ( USA) Accreditation. " While executing fine pastries has also the output for volume and banqueting.
