EXPERIENCED DELI MANAGER DUBLIN 15. Prerequisites for this position would include: Previous cooking experience in a busy café or food retail establishment is required. The ability to be creative and introduce new baked products/ salads/ sandwiches/ Desserts. Be commercially astute while encompassing portion control and a cost base. Be aware of the customers needs and tastes. Have an eye for detail as in presentation of the hot & cold counters for customers daily. The ability to 'Upsell' products or special offers. Introduce tasting days of a new or an improved product. Get involved with other artisan producers. Organise theme days throughout the year via our suppliers and customers. Have thorough Food Safety/ HACCP knowledge. Can manage staff on a day to day basis. Has good training / induction skills. Be customer focused at all times. Can open and close the deli & bakery section. Can record wastage/sales/peak time trends & demands. Is a leader rather than a follower. 5 days over 7 mainly early shifts of 7 am to 4 approx.
